Beth Shields, MS, RDN, LD, CNSC is the Chief of Nutritional Medicine & Metabolism for the US Army Burn Center. She received her Bachelor's in chemistry in 1996 from Westmont College and her Master's in nutrition in 2003 from the University of the Incarnate Word. She has been at the US Army Burn Center for 20 years. She has been the Chair of the Nutrition Special Interest Group for the American Burn Association for 8 years, and has been the Nutrition/Metabolism Section Editor for the Journal of Burn Care & Research since 2021. She has acted as a preceptor for 21 nutrition research interns and 3 burn nutrition fellows. Her research on burn nutrition centers on the impact of carbohydrate on clinical outcomes as well as techniques for providing enteral nutrition and the clinical outcomes associated with achieving nutritional goals. Her future research goals include nutrition computerized decision support and a multi-centered RCT on carbohydrates versus fat as well as further research on hypermetabolism in ECMO patients.
